Dump & Bake Meatball Casserole

Ingredients:
32 oz frozen meatballs
14.5 oz diced tomatoes, drained
24 oz marinara or pasta sauce
1 cup ricotta cheese
1 tablespoon Italian seasoning
2 cups shredded mozzarella cheese
8 slices frozen Texas toast garlic bread

Instructions
Preheat oven to 375F.
Spray a 9 x 13 inch baking dish well with cooking spray.
Dump the meatballs into the baking dish and spread them out evenly.
Spoon the diced tomatoes over the meatballs.
Pour the marinara sauce evenly over the meatballs.
Spoon the ricotta over the marinara, spreading it out as evenly as possible.
Sprinkle Italian seasoning over the top.
Sprinkle the shredded mozzarella on top.
Place the slices of garlic bread out top of the cheese.
Cover the dish with foil and place in the oven for 40 minutes.
After 40 minutes remove the foil and continue baking until the garlic bread is slightly browned on top. 10 - 15 minutes.
Remove the casserole from the oven and allow it to rest for about 5 minutes.

Lunch Lady Brownies

Ingredients
Brownies:
1 cup salted butter melted
1/2 cup unsweetened cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
4 large eggs
4 teaspoons vanilla extract
Chocolate Frosting:
1/4 cup salted butter softened
1/4 cup milk
1/4 cup unsweetened cocoa powder
3 cups powdered sugar

Instructions
Brownies:
Preheat oven to 350° F. Line a 9×13-inch baking dish with foil and spray foil with non-stick spray. Set aside.
In the bowl of an electric stand-mixer, add the melted butter and cocoa powder. Using the paddle attachment, blend until smooth.
Add the flour and sugar. Beat together then add eggs and vanilla. Mix just until combined.
Pour batter into prepared baking dish and spread out evenly. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Remove brownies from oven and let stand 15 minutes before frosting. You want the brownies still warm when you frost them!
Chocolate Frosting:
Beat together all the frosting ingredients until smooth. Pour and spread over warm brownies. Let brownies cool completely before cutting and serving.
