• 1 whole chicken
• 1 teaspoon cumin seeds
• 1 teaspoon coriander seeds
• 12 garlic cloves
• 1/2” peeled hunk of fresh ginger
• 1 tablespoon finely minced fresh rosemary
• 1 tablespoon huacatay
• 1 ½ tablespoons aji panca
• 3 tablespoons soy sauce
• 3 tablespoons red wine vinegar
• ¼ cup olive oil
• coarse salt and fresh cracked pepper to taste
