My new favorite way to eat tofu! This Braised Tofu with Bok Choy features golden pan-fried tofu squares and bok choy, simmered in a deeply savory soy based sauce. The tofu soaks in all of these gorgeous flavors, leaving you with a gourmet, yet weeknight-friendly dish!

Braised Tofu with Bok Choy
Ingredients:
400g firm tofu
1 clove garlic
1 red onion
3 bunches of bok choy
1 bunch of spring onion
1/2 cup cornstarch
salt and pepper to taste
2-3 tbsp olive oil for pan frying

Sauce:
250ml veggie stock
1 tbsp cup low sodium soy sauce
1 tbsp vegetarian oyster sauce
2 tsp sesame oil
black pepper
1 tbsp cornstarch

garnish with garlic chips and sesame seeds
