I would never have thought that it was so quick and easy to make pies from yeast dough. Very fast dough "Diver" or "Drowned". Suitable for any kind of baking. You can cook pies with sweet or savory fillings. The dough is very soft and airy.

To prepare a quick yeast dough "Diver":

Warm milk - 250 g
Dry fast-acting yeast - 5 g (or 15 g fresh yeast)
Butter - 40 g
Vegetable oil - 35 g
Salt - 1 tsp without a slide
Sugar - 80-120 g
Vanilla sugar - 10 g
Chicken egg - 1 pc.
Flour - about 500 g
Dough yield: about 950 g


Filling:
Large plums - 7-8 pcs.
Sugar - 15 tsp
Corn starch - 2 tsp

For brushing the pies:
Yolk - 1 pc.
Milk or water - 2 tsp

1. Add yeast to warm milk, 1 tbsp. sugar and a few tablespoons of flour. Stir and leave in a warm place for 5-10 minutes to activate the yeast. If the yeast is active, then it should start foaming.
2. Add egg, sugar, vanilla sugar, salt, soft butter. Stir and add flour in parts, kneading a soft dough.
3. At the end, add vegetable meat and knead the dough well for 5 minutes.
4. Lubricate the bag with vegetable oil, put the dough into it. Place the dough bag in a bowl of warm water. Leave for 20-25 minutes. After this time, the dough will float to the surface.
5. Divide the dough into 15 parts (about 60 g each). Round each piece into a ball. Cover with cling film and leave for 5-10 minutes.
6. Cut plums into pieces. Mix sugar with starch.
7. Roll each ball into a cake, put plums in the center, sprinkle with 1 sugar and starch. Form a pie.
8. Put all the pies on a baking sheet lined with parchment. Cover with a towel and let rise in a warm place for 20-30 minutes.
9. Lubricate the pies with yolk and water (milk).
10. Bake for 18-20 minutes in an oven preheated to 180 degrees.
