Chicken Yakhni Pulao is a fragrant and savory dish made with basmati rice cooked in a flavorful chicken broth. Here's a detailed recipe to help you make it at home:

Ingredients:
- *For Yakhni (Broth):*
- 1 kg chicken, cut into pieces
- 2 liters water
- 2 medium onions, quartered
- 6 cloves garlic
- 1 inch ginger piece
- 2 bay leaves
- 1 cinnamon stick
- 6-8 black peppercorns
- 4 green cardamom pods
- 2 black cardamom pods
- 1 tsp fennel seeds
- 1 tsp coriander seeds
- Salt to taste

- *For Pulao:*
- 2 cups basmati rice, washed and soaked for 30 minutes
- 2 tbsp oil or ghee
- 1 large onion, thinly sliced
- 2-3 green chilies, slit
- 1 tsp cumin seeds
- 4 cloves
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Fresh cilantro, chopped (for garnish)
- Fresh mint, chopped (for garnish)

Instructions:

1. *Prepare Yakhni:*
- In a large pot, add chicken, water, onions, garlic, ginger, bay leaves, cinnamon stick, black peppercorns, green cardamom, black cardamom, fennel seeds, coriander seeds, and salt.
- Bring to a boil, then reduce heat and simmer for about 40-45 minutes until the chicken is tender and the broth is flavorful.
- Strain the broth and keep the chicken pieces aside. You should have about 4 cups of broth.

2. *Cook Pulao:*
- Heat oil or ghee in a large pot. Add the sliced onions and fry until they are golden brown.
- Add green chilies and cumin seeds, and sauté for a minute.
- Add cloves, turmeric powder, and garam masala, and stir for another minute.
- Add the drained rice and fry for 2-3 minutes so that the rice gets well coated with the spices.
- Pour the reserved yakhni (broth) over the rice. The broth should be double the quantity of rice for proper cooking.
- Add the cooked chicken pieces to the pot. Adjust salt to taste.
- Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked and all the liquid is absorbed (about 15-20 minutes).
- Turn off the heat and let it sit covered for another 5-10 minutes.

3. *Serve:*
- Fluff the rice gently with a fork. Garnish with chopped cilantro and mint.
- Serve hot, ideally with a side of raita or a salad.
