Welcome to today's video, this time we renovated this tripe cutter.
For those who don't know what tripe is, it's the foreguts of ruminants and in the Czech Republic they are mainly used to prepare soups.
The word "tripe" apparently comes from the old expression "tripe", which was used to refer to thrown out entrails.
Although not like the tastiest part of the animal, tripe is actually easy to digest, low in purines and fat. And they are a source of calcium and phosphorus.
For example, in China a spicy salad of beef tripe with vegetables and ginger is prepared, in Peru they prepare tripe seasoned with mint and spices on the grill. In France, tripe with veal legs is wine, garlic and thyme. And so they could continue, in short, each country has its own recipe for processing. The already mentioned soup in the Czech Republic.
The first soup recipe is written in Epicurus' cookbook from the 4th century, but the Czech recipe for tripe soup seems to have come from the original Italian recipe in the 17th century.
Tripe has many enthusiasts, but also detractors, and if tripe does not appeal to you, you can use oyster mushrooms as a substitute.
