Form diameter 21 cm:

Chocolate biscuit:
Eggs - 5 pcs.
Sugar - 150 g
Flour - 110 g
Cocoa - 40 g
Water - 50 g
Baking powder - 1 tsp without a slide
Salt - ¼ tsp

Cream:
Milk - 500 g
Egg - 2 pcs.
Sugar - 120 g
Vanilla sugar - 20 g
Corn starch - 40 g
Butter at room temperature - 150 g

Impregnation:
Milk - about 50 g (depending on which cakes you like: drier or moister)


Glaze:
Chocolate - 100 g
Butter 82.5% - 60 g

1. Beat eggs with sugar and a pinch of salt until light and fluffy. I beat with my mixer for about 7-10 minutes. Add water.
2. Mix cocoa with flour and baking powder, sift to the egg-sugar mixture. Mix gently with a spatula.
3. Line the bottom of the mold with parchment. Diameter 21 cm. Pour the batter into the mold, bake 40-45 minutes in an oven preheated to 180-180°C (350°F). Check doneness with a wooden skewer, it should come out completely dry. Let the cake cool in the pan for about 5 minutes, then transfer to a wire rack and let cool completely.
4. The cream turns out to be incredibly tasty, it tastes like ice cream, very tender and airy. For custard, mix eggs, sugar, vanilla sugar, starch. Add milk. Cook, stirring, until thickened. Allow to cool to room temperature.
5. For the next step, it is very important that the butter and custard are at the same room temperature. Whisk butter for 2-3 minutes. Add custard in small portions, whisking constantly.
6. Cut the finished biscuit into 3 equal parts, soak with milk. Lubricate with cream. It is convenient to collect the cake in the same form in which it was baked. Wrap the cake in plastic wrap and refrigerate for at least 2 hours or overnight to firm up.
7. For glaze, melt the butter, remove from heat. Add chocolate pieces to warm butter. Cover the cake with chocolate icing.
