Cherry clafouti is yet another proof of French chefs’ skill to achieve a wonderful flavour in combination with elegance and simplicity. Clafouti is one of the most favorite desserts among the French. It can be so because this recipe combines ingredients affordability and ease of cooking. In the classic recipe clafouti is baked strictly with cherry and with kernels in, but time brings its adjustments even into ancient recipes. Now clafouti is baked with different berries and cherry kernels preferred to take out. Such a dessert is always welcome when it is a harvest season on a sunny day or even a winter evening, baked out of fresh frozen berries, as a reminder of warm summer days.
Ingredients:
• cherry – 600 g
• butter – 30 g
• eggs – 4
• milk – 240 g
• wheat flour – 125 g
• salt – ½ tsp
• sugar – 100 g
• vanilla extract – ½ tsp
• almond extract – ½ tsp
• powdered sugar – 2 tbsp
You will need:
• oven
• baking dish
• bowl
• mixer or whisk

Preparation:
1. Beat the eggs with the salt, add the sugar and keep beating, then add the flour and mix until smooth. Add 30 g of melted butter, the vanilla and almond extracts, mix until smooth.
2. Take kernels out of cherries.
3. Brush a baking dish with 1 tbsp of softened butter.
4. Sprinkle evenly the baking dish with 2 tbsp of sugar including the walls.
5. Lay out the prepared cherry evenly in a layer and pour with the batter.
6. Bake the clafouti for 50 minutes in the preheated oven at 160°C. When serving sprinkle your cherry clafouti with the powdered sugar.
