Preparation
Nut cream
1. Pour cashew nuts with cold drinking water and leave in the refrigerator for 10-12 hours.
2. For syrup, combine almond milk with vanilla sugar and regular sugar.
3. Put on fire and cook, stirring for 3-4 minutes with active boiling.
4. Cool completely, the syrup can be prepared the day before and stored in the refrigerator.
5. Throw swollen nuts in a colander to completely drain the liquid.
6. Grind with a blender into a homogeneous mass.
7. Add the cooled syrup in several stages, whisking after each addition.

Cake
1. Combine sifted flour with salt, baking soda and baking powder. Whole grain flour works well for the crust.
2. Add any starch and stir.
3. Combine raw carrots with orange juice and vegetable oil, tasteless and odorless. Add zest of one orange, vanilla sugar and regular sugar to taste
4. Grind with a blender to the maximum homogeneous mass.
5. Combine with flour mixture and stir until smooth.

Assembly

4. Soak the upper crust and cover with the remains of orange cream, smooth.
5. Wrap the cake with acetate film or baking paper, cover with cling film on top and send to the refrigerator for 10-12 hours.
6. Decorate the cake with orange slices, kumquats if desired.
7. Fill the surface with gel that begins to thicken.
8. Send to the refrigerator until completely solidified.
9. Grease the sides of the cake with the remaining nut cream, decorate with crumb from the top of the cake.

Decor
1. For decorative gel, combine water with orange juice, sugar to taste and agar-agar.
2. Bring to a boil and keep on fire for 5 minutes stirring to maximize agar activation.
