๐ Ingredients:
๐ Ossobuco 0:00
๐ธ 4 pcs beef shank
๐ธ Salt, to taste
๐ธ Black pepper, to taste
๐ธ 2 tbsp all-purpose flour
๐ธ Vegetable oil
๐ธ 1 onion
๐ธ 20g butter
๐ธ 5 cloves garlic
๐ธ 2 carrots, diced
๐ธ 4 celery stalks
๐ธ 1 tsp salt
๐ธ 1/2 tsp black pepper
๐ธ 1/2 tsp coriander
๐ธ 1/2 tsp rosemary
๐ธ 300ml crushed tomatoes
๐ธ 500ml beef broth
๐ธ 2 bay leaves
๐ Potato gratin 5:36
๐ธ 1kg potatoes, sliced
๐ธ 2 red onions, grated
๐ธ Nutmeg, to taste
๐ธ 300ml heavy cream
๐ธ 100ml hot water
๐ธ 1 clove garlic, minced
๐ธ 2 bay leaves
๐ Preparation
๐น Prepare the beef shank and season it with salt and black pepper. Rub the meat thoroughly on all sides.
๐น Flip the meat and repeat the seasoning process on the other side. Then tie the meat with twine.
๐น Coat each piece of meat in flour.
๐น In a skillet, heat vegetable oil and sear the meat on both sides until golden brown.
๐น Chop the onion and sautรฉ it over medium heat in the same skillet where the meat was seared. Add the butter.
๐น Add the minced garlic and sautรฉ it with the onion for 2-3 minutes.
๐น Add the diced carrots and celery, and sautรฉ the vegetables for 3-5 minutes.
๐น Season with salt, black pepper, coriander, and rosemary. Add the crushed tomatoes and beef broth. Bring the mixture to a boil.
๐น Place the meat and bay leaves into the sauce. Cover with a lid and simmer on low heat for 2 hours.
๐น While the osso buco is simmering, prepare the potato gratin. Place the sliced potatoes in a skillet, add the gratified red onions, and season with nutmeg, salt, and black pepper.
๐น Add heavy cream, hot water, minced garlic, and bay leaves. Sprinkle Parmesan cheese on top.
๐น Cover the skillet with a lid and cook over low heat for 10 minutes.
๐น Transfer the potato gratin to a baking dish and sprinkle some additional Parmesan cheese on top.
๐น Bake the dish in the oven at 430ยฐF (220ยฐC) for 20 minutes.
๐น Serve the osso buco with the potato gratin. The meat will be tender and flavorful.
