๐Ÿ“ Ingredients:

๐Ÿ”ธ 4 pcs beef shank
๐Ÿ”ธ Salt, to taste
๐Ÿ”ธ Black pepper, to taste
๐Ÿ”ธ 2 tbsp all-purpose flour
๐Ÿ”ธ Vegetable oil
๐Ÿ”ธ 1 onion
๐Ÿ”ธ 20g butter
๐Ÿ”ธ 5 cloves garlic
๐Ÿ”ธ 2 carrots, diced
๐Ÿ”ธ 4 celery stalks
๐Ÿ”ธ 1 tsp salt
๐Ÿ”ธ 1/2 tsp black pepper
๐Ÿ”ธ 1/2 tsp coriander
๐Ÿ”ธ 1/2 tsp rosemary
๐Ÿ”ธ 300ml crushed tomatoes
๐Ÿ”ธ 500ml beef broth
๐Ÿ”ธ 2 bay leaves

๐Ÿ“ Potato gratin 5:36
๐Ÿ”ธ 1kg potatoes, sliced
๐Ÿ”ธ 2 red onions, grated
๐Ÿ”ธ Nutmeg, to taste
๐Ÿ”ธ 300ml heavy cream
๐Ÿ”ธ 100ml hot water
๐Ÿ”ธ 1 clove garlic, minced
๐Ÿ”ธ 2 bay leaves

๐Ÿ“ Preparation

๐Ÿ”น Prepare the beef shank and season it with salt and black pepper. Rub the meat thoroughly on all sides.
๐Ÿ”น Flip the meat and repeat the seasoning process on the other side. Then tie the meat with twine.
๐Ÿ”น Coat each piece of meat in flour.
๐Ÿ”น In a skillet, heat vegetable oil and sear the meat on both sides until golden brown.
๐Ÿ”น Chop the onion and sautรฉ it over medium heat in the same skillet where the meat was seared. Add the butter.
๐Ÿ”น Add the minced garlic and sautรฉ it with the onion for 2-3 minutes.
๐Ÿ”น Add the diced carrots and celery, and sautรฉ the vegetables for 3-5 minutes.
๐Ÿ”น Season with salt, black pepper, coriander, and rosemary. Add the crushed tomatoes and beef broth. Bring the mixture to a boil.
๐Ÿ”น Place the meat and bay leaves into the sauce. Cover with a lid and simmer on low heat for 2 hours.
๐Ÿ”น While the osso buco is simmering, prepare the potato gratin. Place the sliced potatoes in a skillet, add the gratified red onions, and season with nutmeg, salt, and black pepper.
๐Ÿ”น Add heavy cream, hot water, minced garlic, and bay leaves. Sprinkle Parmesan cheese on top.
๐Ÿ”น Cover the skillet with a lid and cook over low heat for 10 minutes.
๐Ÿ”น Transfer the potato gratin to a baking dish and sprinkle some additional Parmesan cheese on top.
๐Ÿ”น Bake the dish in the oven at 430ยฐF (220ยฐC) for 20 minutes.
๐Ÿ”น Serve the osso buco with the potato gratin. The meat will be tender and flavorful.
