Makes 4 medium cups, or 8 small cups

Ingredients for the Lemon Curd:
- 1/2 cup (120 mL) fresh lemon juice
- 1/2 cup (100 grams) sugar
- 3 egg yolks
- 4.2 oz (120 grams) unsalted butter, cold
- 1 tablespoon (6 grams) lemon zest

Ingredients for the Lemon Mascarpone Mousse:
- 17.6 oz (500 grams) Mascarpone cheese
- 3/4 cup (150 grams) sugar
- 1/2 cup (150 grams) lemon curd
- 20 oz (600 mL) heavy whipping cream, cold

Ingredients for the Crumb Base / Topping:
- 1 cup (120 grams) lemon cookie crumbs, or any cookie you'd like
- 2 tablespoons (28 grams) melted butter

For the decoration:
- Fresh lemon slices
- Mint leaves
- Lemon cookie crumbs
