For cooking, I took a piece of brisket, you can use bacon and washed it well under running water and wiped it dry with paper towels.
In a separate bowl, pour table salt 2 % of the brisket weight, nitrite salt 1 % of the brisket weight, sugar 1 % of the brisket weight, crushed garlic (4 cloves), 4 Bay leaves, 1.5 tablespoons of ground black pepper, 1 teaspoon of nutmeg and 1 teaspoon of dry thyme. I mix everything well and RUB the brisket well on all sides with this mixture. Grated with spices and salt, I put the brisket in a bag with the skin down and put it in the refrigerator on a cold shelf to marinate for 4 days. After 4 days, I put the brisket in a clean bag with the skin up, and put it back in the refrigerator for another 4 days.
After 4 days, I wash the brisket under the tap, wash off the spices, dry it with paper towels, put it on the grill, and bake it in an oven preheated to 100 degrees Celsius (212 degrees Fahrenheit). Bake at 100 degrees Celsius (212 degrees Fahrenheit) for 2 to 3 hours, until the meat is red. Ready bacon is cooled to room temperature and put in the refrigerator.

Brisket-1700 gr,
Salt - 2 %of the brisket weight (34 g ),
Nitrite salt-1 % of the brisket weight ( 17 g),
Sugar - 1 % of the brisket weight (17 g ),
Garlic-4 large cloves,
Bay leaf - 4 pieces,
Black pepper-1.5 tablespoons,
Nutmeg - 1 teaspoon,
Thyme ( thyme) - 1 teaspoon.
