Sometimes you can find healthy and tasty stashes of food in the refrigerator that are deliberately stored for a special recipe! I often see comments in the comments: “What to do with spoiled cottage cheese?”, “Where to put frozen berries and fruits, since the fresh season is approaching?”
For me this is not a problem, but a useful find!

Today I found a use for my cottage cheese and frozen cherries - we will have cheesecakes!

Filling:
- 300 grams of frozen cherries (pitted)
- 3-4 tablespoons of sugar
*** bring to a boil in a saucepan

- 1 tablespoon starch (+ 1-2 tablespoons cold water)
*** pour into hot cherries with sugar, stirring, do not bring to a boil. Cool.

Cheesecake dough:
- 200 grams of cottage cheese
- 100 grams of sugar
- 10 grams vanilla sugar
- a pinch of salt
- 1 egg
- 80 ml vegetable oil
*** Stir. All ingredients at room temperature

- 300 grams of flour
- 10 grams of baking powder
*** Stir and add to the curd mixture.
- 0.5 teaspoon of soda, quench with vinegar (I have apple vinegar)
*** Add flour gradually.

I shape it into a cheesecake, put the filling in the center, sprinkle the sides with poppy seeds (this is optional)

Place in an oven preheated to 180° for 20-25 minutes
Sprinkle the finished, cooled cheesecakes with powdered sugar.

Breakfast idea:

- a piece of butter in a frying pan
- green onions (chopped, fried)
- 4 eggs (in fried onions)
- ground black pepper
- salt to taste

***heat the eggs with onions for 2-3 minutes.
